What would be the best way to repaint the canvas on my Peterborough Prospector 92X? What is the best varnish to use on all the wood?

In my opinion your canoe would not benefit from new paint and varnish. I don’t think that there is much you can do to the bad spots on the ends. I would not be surprised if there is extensive rot under those bad canvas areas.
I looks to me to be a candidate for total restoration.
