I have a 16' Sponson model serial number 19217 It has the diamond head fasteners. Any help with when it was made would be appreciated.

I think you need to take another look at the serial number -- the Old Town canoe with the serial number 19217 is a 16' Charles river model, CS (common sense or standard) grade with western red cedar planking, spruce gunwales and maple decks, thwarts and seats, spruce finish rails, and equiped with a keel. It was originally dark green, and was shipped to Baltimore, MD on March 7, 1912. It was built in 1911, before diamond head bolts were in use, and was not a sponson canoe.

While the original bolts of canoes earlier than 1922-23 were sometimes replaced with diamond head bolts during restorations, sponsons are not an add-on option -- with very rare exceptions, they are factory built and installed. So if your canoe has sponsons, this is likely not the build frecord for your anoe.
