Gunwale replacement

Curious about Wooden Canoes
My Old Town Charles River has been restored once in the past leaving the top of the ribs pretty beat up. I need to replace inwales and outwales. I would like to form the new inwales beneath the existing and cut the old off resulting in lowering the canoe depth 3/4" (from 11 1/2" to 10 3/4"). The intended use for the canoe is flat water, lazy day floating & fishing. Is this acceptable or should I resin fill the mess?
Also I'd like some input on OT replacement decks. I know one WCHA user is not pleased with the OT quality for a historic restoration (1917). Any more thoughts would be appreciated.
