Welcome, the Old Town canoe with serial number 11003 is a 16 foot long, CS (common sense or middle) grade, HW model with red western cedar planking, closed spruce gunwales, spruce decks, spruce thwarts, spruce seats, spruce outside finish rails, and a keel. It was built between April and June, 1909. The original exterior paint color was dark green. It shipped to Eagles Mere, Pennsylvania. A scan showing this build record can be found below.

It is also possible that the canoe could have another number or manufacturer if this description doesn't match. The Carleton and Kennebec canoes with this serial number are both 18 feet long from 1916 for example. Can you provide some pictures of the bow deck and serial numbers from each end?
