Bedding compound, caulk, Dunhams wood filler?????

Getting outside stems to fit is difficult enough that I need to fill some area along the stem/canvas line. I intend to paint the outside stems the same color as the canoe and want a smooth transition to the OS stem. Anyone with experience in filling this area? What did ya use?

Some folks would just canvas over the outside stem.
I have not done that, but if I did, I'd use "Quick Fair" from Jamestown. I'd use bedding around the screw holes, then fill in with the Quick Fair.
