what is the best method trick to transition from the lapped planking mid boat to the bevel lap smooth skin at the stems.

Gains - a rolling bevel cut with a 2" chisel.

do you go from a lap to a smooth skin lap , bevel both planks?

Exactly. For canoes, a 14" gain is right.
