Is there already an established list of places that have canoes and kayaks in their holdings?

I can't think of one.
We might post suggestions here. I was in St Augustine around 2015, their historical society had a display of dugouts found in Florida.

Get a copy of The Museum Small Craft Association's union list of museum watercraft as described at https://www.worldcat.org/title/38452951 for this information. Most of the really interesting ones are often not publicly exhibited so you will need to make an appointment in advance to see them. Is there something particular that you are seeking?
