I'm thinking your canoe had outside stems originally. The face of the stem visible in your pictures seems too wide for just a brass stem band. After you get the old canvas off and the stems cleaned up you may find the screw holes that held on the outside stems. Good luck with the restoration. Keep us posted with pictures.
