Poly Bubbles

When you say bubbled, do you mean tiny bubbles that would be produced by a foam roller or did a bubble form under the varnish and expand. In the first case, tipping off the varnish will prevent the tiny bubbles. If the latter, maybe your wood had moisture in it that needed to evaporate out or the wood was heating up and air expanded. Either way, as long as the varnish is dried, you should be able to sand it lightly to remove any larger bubbles and then re-apply.
