What do people do with planking that is good, but a Knot has dried up and fallen out? If it happens to fall on rib, no problem, I"l just fill it in with some wood dough, but what if it doesnt?

Drill it out and insert a tapered plug from the outside using epoxy.

In order not to be considered a racist, I'd call it a bung or plug.

Sorry about that-I couldn't resist. Truthfully, I would cut out a small rectangular section of planking and glue and tack in a patch.
